Fried shrimp, mmmmm. This was always a favorite of mine. When Sophie’s Kitchen Vegan Seafood line came out I was ecstatic. In fact, I was so excited that when I couldn’t find it in my local stores I contacted the company directly. They were kind enough to let me know which stores carried their line and I was off to make a purchase. The first product I tried was the fried calamari. Delicious. Check out my review here.
Next up, the fried shrimp. Over the weekend I mixed up some cocktail sauce, served it with the fried shrimp and dinner was served…or at least appetizers. I had eaten a few and went to do something else when my husband bellowed, “do we have anymore shrimp?” I said no. A few minutes later I walked into the kitchen to an empty platter. “You ate it all?” I accused. “I asked you if you wanted any more shrimp!” he replied. Another stellar moment in our communications. And a very sad and empty stomach.
These shrimp remind me a lot of the real thing and they make a perfect appetizer or try them in a vegan po’boy. They are also low in calories and contain a good amount of fiber.
