Pasta salads are one of my favorite summer dishes. It’s perfect food to serve at picnics, barbecues or even to bring to the beach. I’ve been making this pasta salad from Ina Garten for a few years now and it never fails! In her version she uses orzo, but I used quinoa spiral pasta instead, for a little boost in protein and fiber, and substitute the feta for daiya pepperjack shreds.

Vegan Pasta Salad
Easter Dinner
My sister gets really annoyed when it’s her turn to host holidays since my family has become full-fledged vegans. She usually has a few choice comments for us. (“I hate cooking for you damn vegans – you don’t eat anything!”) She’s (half) kidding, of course, and always goes out of her way to accommodate us. This Easter we thought it would be fun to take a traditional meal and make vegan and regular versions. It was so much easier than I thought it would be and we had fun cooking together.
