Easter is one of my favorite holidays. I think I love it so much because the weather is getting warmer, the days are longer, everything about it is pastel and pretty and you become surrounded by candy.
This year we hosted Easter dinner. None of my guests were vegetarian much less vegan so I was a little worried. I went with my stuffed shell recipe for the entree (but had plenty of back up garlic bread, just in case) and, for the appetizer, I made the goat cheese from Vegetarian Times.
