I make these peanut butter oat bars for when I really need dessert. These are healthier than processed sweets and taste way better. I wouldn’t exactly call them low in calories, but they are dessert after all! You can customize these bars to your taste very easily by choosing different nut and dried fruit combinations.
Adapted from this recipe:
Ingredients:
1 cup all natural peanut butter
1/2 cup maple syrup
1/2 cup coconut oil
2 cup old fashioned oats
1/3 cup of sunflower seeds, peanuts, or chopped almonds
1/4 cup vegan chocolate chips
Directions:
In a medium saucepan, melt together peanut butter, maple syrup and coconut oil.
Remove from heat and add your oats, stir until thoroughly mixed. Next add sunflower seeds and chocolate chips (or whatever you are doing for add-ins) and stir well.
Spread mixture into a 8×8 pan. Chill for two hours, then cut into bars. Makes about 12 medium sized bars.
