Peanut Butter and Banana “Ice Cream” Sandwiches

Peanut Butter and banana graham cracker sandwiches | mightyvegan.com

Every night, after dinner, I get the same question from my five year old, “what’s for dessert mom?”. Occasionally I get by with handing out an apple…but it’s clearly a second or third place choice. First place is always ice cream. I make a lot of banana ice cream. Continue reading →

Cake Batter Popcorn

vegan chocolate cake batter popcorn

This is a seriously delicious recipe that will have you addicted! I started seeing this pop up in the blogosphere over the last few weeks and it caught my eye right away. I love the mix of sweet and salty all in one bite! With a few small tweaks I was easily able to make this vegan.  All of the recipes I saw used white chocolate chips, which is the version I originally made. Continue reading →

Egg Decorating for Vegans!

vegan eggs

My neighbor has an awesome little Easter party every year for the kids. They have a blast dying eggs, decorating cookies and hunting for Easter eggs. Easter is one of my favorite holidays, besides the “hunting”, I love all of the activities of Easter. “Egg” dying, candy eating and cupcake baking!

These cupcakes are really fun to do with your kids. I had my daughter help with the decorating and she had a blast. Separating the jelly bean colors alone kept her busy for 30 minutes. I caught her, quite a few times, putting extra frosting on the cupcake, so that she’d “have to” lick it off of her fingers.

I made a lemon cupcake Continue reading →

Every year at Christmas my mom makes these awesome cheese wafers for everyone. They are so tasty that they are usually gone an hour after she arrives. Since I can’t eat her version, I decided I’d try to make a vegan version Continue reading →
