Vegan Chickpea Fritters

The reason I made these chickpea fritters is pretty simple. I can’t resist any recipe that has the word “fritter” in it. I admit I have been disappointed by a fritter before, but not so with these. They taste a little like bad for you food, but they aren’t. Packed full of protein and fiber, they are perfect for dinner, lunch or an appetizer. They come out nice and crispy on the outside and are really filling. I’ve served them quite a few times
