Peanut Butter and Banana “Ice Cream” Sandwiches

Peanut Butter and banana graham cracker sandwiches | mightyvegan.com

Every night, after dinner, I get the same question from my five year old, “what’s for dessert mom?”. Occasionally I get by with handing out an apple…but it’s clearly a second or third place choice. First place is always ice cream. I make a lot of banana ice cream. Continue reading →

Dr. Furhman’s Healthy Chocolate Cake

Dr. Fuhrmans Healthy Chocolate Cake | mightyvegan.com

I know what you are thinking, a chocolate cake made of beets, carrots, fruits and dates, no thank you! I, too, was very skeptical about this recipe. These would be perfect to add frosting too, as they aren’t super sweet so the frosting wouldn’t overpower them.  Continue reading →

vegan lemon shortbread cookies

We are getting ready for Santa at our house! These are the cookies we planned to leave for him. However…they are all gone. So today begins the second baking session.

I’m going to make 2 batches of these today. One as is, and the second batch using Earth Balance instead of the oil and orange zest instead of the lemon. These cookies are so delicious Continue reading →
