Rarely is there a day I actually sit down and enjoy my lunch. I usually eat while I’m making my daughter’s lunch or working at the computer. I don’t really give it as much thought as I would like to. So it’s nice when I discover something I can make ahead of time and not have to fuss over it too much. This is a great take on egg salad. It’s super easy to make and has a nice egg flavor to it.
